The fees on ETH network are too high

That has absolutely nothing to do with anything, you have these pegs on various evm chains

if you're using a CEX, you can just swap without "eth fees", you'll have eth fees if you're working on the eth network, for example on metamask. You'll have to pay these fees regardless of what stablecoin you're swapping to IF you're on the eth network on a dex.

The approach to coin selection on PoS is not much different from standard investing. You can get an insight and buy a little-known cryptocurrency in the hope of its rapid growth, which is risky. But you can be more prudent and look at already well-established assets.
It took me a long time to understand
this topic, we studied many articles, but most of all I liked this article, which presents all the information in a concise, but at the same time voluminous form. And among cryptocurrencies on PoS, it is definitely worth to look at the leaders of this market. For example, you can objectively single out: Etrium, Solana, Binance Coin, Cardano, TRON, EOS, Tezos, DASH, Stellar, DEL or Polkadot.
