Stuffed Potatoes Recipe

 

Ingredients:
- 4 large russet potatoes
- 2 tbsp olive oil
- Salt and pepper to taste

 

Filling:
- 1 cup cooked, crumbled bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup melted butter
- Salt and pepper to taste

 

Instructions:

1. Preheat oven to 400°F (200°C).
2. Scrub, oil, and season potatoes, then bake for 45-60 minutes.
3. Mix bacon, cheese, sour cream, green onions, and melted butter.
4. Slice off the top third of each potato.
5. Scoop out potato flesh, leaving a thin layer.
6. Mash potato flesh with the filling.
7. Stuff potato skins with the mixture.
8. Bake for 10-15 minutes.
9. Serve with garnishes as desired.

We usually keep it simple, grate enough cheddar cheese, fry up a pound of bacon, and drain the fat.

Take the baked potatoes and scoop everything out. Mix the cheddar, potato, and 3/4ths of the cheddar cheese, as well as some bacon, then fill your skins up.

Sour cream on the side and you are good to go.
