There are few ideas
1- A small farm: You can build a farm for crops such as wheat, potatoes, carrots, and beetroot. You can also add a few animals like cows, pigs, and chickens.
2- A treehouse: Build a small treehouse in a nearby forest or jungle biome. You can even connect it to a nearby tree with a bridge.
3- A watchtower: Build a watchtower on a hill or a high point. You can use it to keep watch over your surrounding area and keep an eye out for hostile mobs.
4- A fishing dock: Build a small dock near a body of water and create a fishing spot. You can even add some decorations like lanterns and benches.
5- A small mine: Dig a small mine and explore the underground. You can find valuable resources like iron, gold, and diamonds.
6- A small village: Build a few houses and create a small village. You can populate it with villagers and trade with them.
7- A lighthouse: Build a small lighthouse near the coast. You can add some redstone to make the light turn on and off.

Iron farm, mob farm, villager trading hall is pretty much all you need for everything.
