Okay so I never thought we'd come to this one day ; but here we go, enjoy!

 

 

I personally love this dish and to make it clear from the start, I'm not of hispanic/latino or south american descent whatsoever so please correct me if I'm doing something wrong but here's my casual recipe when I get the chance to cook for a group of people, or on a family occasion. 

 

  DIFFICULTY :

What you're basically gonna need is : 

 

For 4 people. Should take approx. 1 hr 10-20 minutes

 

- 16 ounces or 500 grams of minced beef 

- 1 large onion / or 2 small ones (red is my preference)

- 2/3 garlic gloves

- a couple peppers, either red yellow or green that's completely up to you

- one tablespoon of chili powder (mild can do too if the onions are already too much for you :D )

- one tablespoon of cumin 

- canned chopped tomatoes (get 1 or 2) 

- (optional) canned corn

- canned red kidney beans

- salt and pepper according to how it tastes

 

The thing I like about this dish is how you get a proper taste of old fashioned cuisine while preparing your dish. 

 

Simply throw your biggest frying/wok pan on the gas hob or whatever it is you have, even a small fireplace would do lol, put some olive oil inside and leave it to heat up while you chop 2 onions into small cubes, as small and possible, and like three or four garlic gloves, depending on how many people you have, your own preference if you like garlic or not etcetera etcetera..

 

Lower your pan to medium heat and chunk your diced onions and garlic inside.

Now add your minced beef into the pan and mix it with the onions, garlic and oil.

 

At this point you should add some pepper and salt into the pan, I personally don't even check at how much salt and pepper I add but I add a little every once and a while during the cooking process so I can get a taste of my dish and add accordingly if needed.

 

Make sure you stir everything regularly for approximately 10 to 15 minutes, onions should start feeling soft and looking browned while the beef should harden and get a better looking golden brownish texture. Do not hesitate to turn the heat up if needed but stir all the time and don't leave your pan until the tomatoes are in. LITERALLY that's the only thing you have to do to get your shit right. 

 

So yeah when your mixture is starting to look good you should lower the heat and add your peppers ( which I personally like to chop in long sticks) and your canned corn as well as both table spoons I mentioned earlier, cumin and chilli pepper that is. 

 

Do not forget to keep stirring for another 10 minutes on either medium or a little higher heat. Mind that at this point your pan should be sizzling like a madman already but that's completely normal. 

 

Okay so next come the tomatoes, lower the heat and chunk your canned tomatoes into your pan with half a glass of water perhaps, stir it well and this is the part where I usually add a second round of salt and pepper

 

Great, so at this point you'll have to let your dish cook itself and slightly boil, you can cover it if you lower the heat really much for about 20 minutes but I suggest doing that once all ingredients are inside. 

 

So in this part all you'll have to do is check on your pan and stir so it doesn't catch underneath, otherwise it means you'll have to lower the heat because you're heating up your sauce too hard. I suggest you add a little more water if that happens.

 

So last but not least, drain your kidney beans, get them red if possible, and gently stir them into your pan, now this time you should cover your dish and let it boil for 10-15 more minutes and make sure all the kidney beans are cooking in your boiling sauce because I don't recommend you trying uncooked beans, really. Just never forget to stir because it might dry out underneath, if so - water 

 

Taste your dish when done and add some salt and pepper if needed. The smell should be godly at this point in your kitchen and you can turn off the heat and leave it to stand for 5 to 10 minutes before you're ready to serve. 

 

I think the perfect sidedish here is some plain boiled rice but that can be up to you really.  So yeah there you go !
